Setting time is the time required for stiffening a cement paste to a defined consistency. Setting time is affected by a number of factors including cement fineness, water-cement ratio, chemical composition (especially gypsum content), admixtures and is generally tested by Vicat apparatus. Consistence of fresh mortar can be assessed by Flow table method or Plunger apparatus.
